Chicken Soup

SERVES: 4

 

INGREDIENTS

  • Left over roast chicken or 4 chicken legs/thighs
  • 2 small sweet potatoes peeled and chopped
  • 1 onion, chopped
  • 4 small/medium carrots, chopped
  • Black pepper
  • Sprinkle of celery salt
  • 1 litre of veg stock
  • 2 tsp ground turmeric
  • 1 tsp garam masala
  • Small head of broccoli (or use any leftover vegetables)

 

INSTRUCTIONS

  1. Put all ingredients in a saucepan, bring to boil and then simmer with lid on for 20 mins (if chicken already cooked) and 1 hour if using raw chicken. You can serve this blended if you prefer.
