SERVES: 2
INGREDIENTS
- 1 bag of rocket leaves
- 4 sundried tomatoes, chopped
- 1 tin of chickpeas
- 1 tsp paprika
DRESSING INGREDIENTS
- 1 tbsp olive oil
- ½ tbsp apple cider vinegar
- ½ tsp ground turmeric
- 1 tsp honey
INSTRUCTIONS
- Preheat oven to 200c
- Drain & rinse chickpeas, place on baking tray and coat with olive oil and paprika
- Bake for 20 mins.
- Make up the dressing.
- Mix all of the ingredients together.
- Serve with the chickpeas still warm.
