Lamb Tagine Slow Cooker – Serves 4

·         Pack of good quality diced lamb (I used an organic one from Riverford)

·         1 large onion, chopped

·         1 carrot, chopped

·         1 small head of broccoli broken in to florets

·         3 cloves garlic, crushed

·         1 tin chopped tomatoes

·         Zest & juice of 1 lemon

·         1 vegetable stock cube (I use Kallo) dissolved in 300ml hot water

·         1 tin chickpeas, drained

·         1 tsp ground ginger

·         ½ tsp ground coriander

·         ½ tsp ground ginger

·         2 tsp paprika

·         1 tbsp runny honey

·         Handful walnuts, broken

·         6 dried figs (or use dates/apricots/raisins), chopped

 

Place all ingredients in the slow cooker. Stir and then turn on to low and cook for at least 6 hours. Serve with rice, potatoes, cous cous or quinoa.
