Pasta Sauce – Serves 4
- 1 onion chopped
- 2 cloves garlic crushed
- 1 carrot grated
- ½ medium courgette, grated
- Handful of spinach
- Half red pepper chopped
- Handful cherry tomatoes, chopped
- 1 carton passata
- 1 tbsp tomato puree
- 1 tbsp olive oil
- 1 tsp mixed herbs
- 1 tsp vegetable bouillon powder
- Ground pepper
Boil the kettle.
Dissolve the vegetable stock powder in to 100ml boiling water.
In a large frying pan, heat the oil and then add the onion and garlic.
Add the vegetables and cook for a couple of minutes.
Add the remaining ingredients including the stock and bring to the boil. Turn down heat, cover and simmer for around 20 mins or until the vegetables are cooked.
Use the sauce with chunky veg or blend if you have children who prefer a smoother sauce. You can also add red lentils and/or other veggies to this recipe.
