SERVES: 2

 

INGREDIENTS

  • 1 bag of rocket leaves
  • 4 sundried tomatoes, chopped
  • 1 tin of chickpeas
  • 1 tsp paprika

 

DRESSING INGREDIENTS

  • 1 tbsp olive oil
  • ½ tbsp apple cider vinegar
  • ½ tsp ground turmeric
  • 1 tsp honey

 

INSTRUCTIONS

  1. Preheat oven to 200c
  2. Drain & rinse chickpeas, place on baking tray and coat with olive oil and paprika
  3. Bake for 20 mins.
  4. Make up the dressing.
  5. Mix all of the ingredients together.
  6. Serve with the chickpeas still warm.
