Bircher Muesli – Serves 2

• 100g oats
• 2 tbsp chia seeds
• 1 tbsp pumpkin seeds
• 350ml almond milk
• Pinch of ground cinnamon
• Sprinkle of vanilla powder or a few drops of extract
• 1 grated apple including skin
• 3 dried apricots cut in to small pieces
• Flaked almond or coconut to serve

1. In a large glass bowl (or mason jar) add all ingredients and mix together
2. Cover with cling film and leave overnight in the fridge
3. In the morning, mix again well, then pour out desired serving into a bowl.
